My New Favorite Breakfast

  • 1 cup of shredded potatoes (i used dehydrated in this case)
  • Three eggs gathered moments earlier, opened, waiting in a bowl.
  • 1/4 to 1/2 cup of Mezzetta roasted green chilies, drained. Why this brand? because unlike the Ortega or even Hatch canned green chilis Mezzetta uses lime juice and cilantro and leaves much larger whole pieces of chili.
  • Three healthy slices of Tillamook colby-jack cheese or half a cup or so shredded.
  • Dried parsley
  • Aleppo pepper
  • Salt & pepper

Heat a 12 inch pan to medium, dump in the potatoes and spread them loosely. Sprinkle with parsley and Aleppo pepper. Cover and cook for about 5 minutes.

Uncover and using a spatula gather the potatoes together into a patty, loosen from the pan (lately i’ve been lucky with my Scanpan), and flip over.

Sprinkle the chilies over the potatoes being careful to distribute evenly. Cover and cook for 3 minutes.

Uncover and place the cheese slices or shredded cheese on top of the chilies. Cover and cook for another 2 minutes or until the cheese is seriously melty.

Uncover, loosen the potatoes and slide off the pan onto a waiting plate.

Quickly clean the pan of anything that might cause the eggs to stick, return to heat and pour in the eggs being careful not to break the yolks. Sprinkle with salt and pepper (l like lots of fresh-ground black pepper). Cover and don’t walk away. Timing is important here because you want the eggs cooked more than regular sunny side up, but not so much the yolk is hard. I find medium low heat works best. When i get it right the eggs seem nearly poached.

Slide the eggs on top of the waiting cheesy-chili-potatoes, add additional salt & pepper to taste, take to an outside table and enjoy.

Yes it’s a Hipstamatic, but that’s seriously what the scene was just before sunrise the other day. The vapor trail was like neon against the purply-greenish sky.

Phillip Seymoure-Hoffman was found dead this morning and that sucks. He was 46. Looks to be heroin overdose.
